For family night tonight we (David's mom Darlene and I) made fried deviled eggs!  I had seen a video recipe on Facebook and thought they looked interesting so we had to try them.  

We cut boiled eggs in half and dipped in flour, egg, and bread crumbs and fried in vegetable oil on the stove.

Next we combined 3 different mustards( spicy brown, Dijon, and grey poupon), relish, mayonnaise, & salt and pepper.  Then added to a sandwich bag, closed and cut the corner.

Add some paprika on top and serve!  I'll add this recipe to the appetizer section.  Everyone thought they turned out well.  I will definitely be making again! :)

I decided to make a breakfast casserole last weekend.  Perfect recipe for an easy breakfast meal!
All you need is milk, cheese, sausage, hash browns, and eggs.  I also add hatch chills if in season (YUM) or sometimes hot sauce.  It's up to you though on if you like spicy or not.  Recipe is in my breakfast section.  Enjoy :)

Valentine's Day was amazing this year.  I got red roses hand delivered to me at work from David on Feb 11!  On the 14th we went to Whole Foods and David picked out a Ribeye, I picked out a coconut pistachio crusted tilapia, and we both agreed on crab cakes. I came home and made the most amazing creamy mashed potatoes, mushrooms to put on top of his steak, broccoli, and store bought chocolate chip cookies.  Everything was delightful!

Yesterday we had our family friends Dowanne and Craig over for dinner.  We hadn't seen them in a while and they wanted to meet our new kitten Cleo.  My mom and Dowanne went to high school together. It's always fun to get together with them!  I made a Ravioli lasagna with breadsticks and a salad.  Dowanne made a pie that was my grandmothers recipe! Everything was delicious!  I was so stuffed!  

For the Ravioli lasagna, I got an Italian sausage stuffed ravioli ( 2 packages), but you can use whatever flavor you want. I found these at Kroger.  They also had a spinach or mushroom flavor.  Or you can get regular beef flavor in the frozen section.
 First I made my sauce.  I got sweet Italian turkey sausage and marinara.  I added a little bit of onion,garlic, and basil and then browned the sausage in a pan. Then added marinara and kept on low for about 3 min for flavors to mingle.  

Then I heated the ravioli in warm water until soft 
Let the layering begin!  Spray your dish with cooking spray and then add marinara sauce to bottom.  ( I got two cans of marinara- one to add to meat and one to add extra sauce to lasagna) . 
Start layering your ravioli & ricotta cheese: 
Top with meat sauce, and shredded Italian cheese- repeat with more ravioli, ricotta, meat sauce and cheese 
On the last layer I added the rest of the cheese for bubbly goodness: 
Bake in oven at 350 until bubbly then turn oven to broil until cheese is a little browned:

Last weekend the guys ( David, his Dad Dave, and brother in law Mike) went quail hunting.  They came back with 18 birds!  Last night we had a Quail dinner where each family made a different recipe to try. David chose the recipe for his portion which was a garlic butter quail with rosemary cooked in our Sous Vide oven, torched, and then drizzled with honey.  Darlene ( David's mom) made buttermilk fried quail, and Sarah ( David's sister) made bacon wrapped quail with pepper jack cheese.  Darlene also made a creamy potato dish and I made green beans.  Mmmm everything was so tasty!

Here is Davids garlic butter Rosemary quail- cooking in Sous vide oven.  This is a water oven that cooks at the exact temperature for the selection of meat.  You put meat into vacuum sealed package and put into water oven.  It makes everything really tender.  Our chef friend told us about the Sous Vide.  He said they use it in most restaurants.

Last week David and I made empanadas!  We used leftover stroganoff beef with added salsa and spices for flavor and made one batch with handmade dough and another with frozen pie crust.  Both were good, but the frozen pie crust browned better.  You can also use leftover chicken or pork to make these. (Picture at the bottom of avocado salsa chicken empanadas as well).  To make the empanadas, we got a bowl and cut out a circle, added our filling, and pressed with a fork.

Here is the leftover stroganoff with the salsa and spices.  You can add cumin, chili powder, your favorite salsa or hot sauce.  David added hot sauce, but salsa would be just fine and less spicy:
