Sweet Potato Chili 
This is David's favorite chili recipe.  No beans, but instead carrots and sweet potato!  It has a spicy and sweet flavor.  

2 lbs ground beef
1/2 red onion diced
1 teaspoon minced garlic
1 small can tomato sauce
1 can diced tomatoes with juice
1 tablespoon better than beef bullion
1 can of sliced carrots
2 sweet potatoes- sliced in half
Olive oil
2 bay leaves
1/2 teaspoon dried thyme
1 teaspoon dried cilantro
2 tsp salt
1 1/2 tsp black pepper
1/2 cup chili powder
1/2 teaspoon cumin
Dash of oregano
Dash of red pepper flakes
1/4 cup water

On a baking sheet, add potatoes (cut in half long ways) and drizzle with olive oil.  Heat oven to 400 degrees and cook for about 8-10 min until tender.  Once tender, cut the potatoes into cubes and set aside.

In a large pot, add onions and garlic and cook until done on medium heat.  Add ground beef and dry ingredients and cook until brown.  Add all remaining ingredients including carrots and stir.  Lower heat to medium low.  Once the sweet potatoes are finished, add to the chili and stir.

Paleo Almond Coconut Crusted Chicken Fingers

These were like buttermilk chicken fingers, but I used Greek yogurt instead.  These were really good!  

1 lb Chicken Breasts
1/4 cup almond meal (You can also blend some almonds if you have some...)
1/4 cup coconut flour
1/4 cup unsweetened coconut
1 can coconut milk
1 container of plain Greek yogurt
Peanut Oil
1 Tbsp Paprika (optional)
1/2 tsp garlic powder (optional)

1. Preheat oven to 400
2. Pound and Slice your chicken into small strips.  Mix together almond flour, coconut flour, and coconut, paprika, & garlic.
3. Dredge each piece of chicken in the Greek yogurt and then into the coconut milk and then coat with the almond / coconut mixture.
4. Fry in a pan until outside is brown and then put on a baking sheet in the oven for about 10 min until cooked through.
5. Serve with your favorite dipping sauce.

**Tip - If you want the strips a little bit more brown, you can always turn oven to broil.  Just make sure to keep an eye on it so they aren't burnt to a crisp!  

Spaghetti with Sweet Potato and Carrot Noodles

This was amazing.  I loved the way the carrots and sweet potatoes calmed down the tomato sauce!  You will need a vegetable spiralizer for this recipe, or you can cut into strips with your knife or use your vegetable peeler.

2 sweet potatoes
3 large carrots
1/2 red onion- Diced
1 jar of organic sugar free / gluten free spaghetti sauce
Olive oil
Salt & Pepper
2 Pounds Ground Beef - We used grass fed
1 clove garlic minced
1 beef bullion cube
Italian Seasonings
1 package mushrooms

1. Spiralize or cut your carrots and sweet potatoes into strips and lay on cookie sheet with olive oil and salt and pepper.  Bake at 400 degrees for about 20 min until a little tender and cooked through.
2. In large pot add onions, garlic, and olive oil and cook through on medium heat.  Add the mushrooms and saute until tender.  Stir in ground beef, salt, pepper, & Italian seasoning and cook until brown.  Once cooked through, add the bullion cube and spaghetti sauce stirring occasionally.  Lower heat to medium low and cook for another 5 min.
3. Add noodles to bowl and top with spaghetti sauce and serve with a little Parmesan cheese, or leave the cheese out.

Creamy Vegan Alfredo Sauce- With Cashews
For my friends who are vegan or on special diets :)

1- 1/2 cups raw cashews (not roasted or salted)
2 1/2 cups water
200 ml full fat- coconut milk about 1/2 can. (Can be found in the Asian section)
1 vegetable bullion cube (be sure to check ingredients for allergy concerns)
3 cloves of garlic, minced
Pepper & Sea salt to taste

1. Thoroughly blend all ingredients together in food processor.  Thin out more with water if desired.
2. Heat and serve over gluten free pasta or zucchini noodles.

Cauliflower Crusted Pizza 

Ingredients for the crust:   

  • 1 small to medium sized head of cauliflower
  • 1/2 teaspoon Italian seasonings
  • A few flakes of crushed red pepper
  • 1/4 cup shredded Parmesan cheese 
  • 1/4 cup Mozzarella cheese
  • 1 egg 


Ingredients for the toppings: 

  • Mozzarella cheese 
  • Italian sausage 
  • Turkey Pepperoni
  • Olives 
  • Mushrooms
  • Minced Garlic 
  • Marinara sauce, Alfredo sauce, or marinara pizza sauce
  • Chopped basil 
  • Parmesan cheese 


  1. Preheat oven to 450 degrees.  
  2. Chop cauliflower in food processor until it looks like snow.  Microwave in a bowl for 4 min until steamed.  Let cool. 
  3. Place the cooled cauliflower into a dish towel or cheese cloth and wring it out & squeeze until all water is removed.  
  4. Dump the cauliflower into a bowl and add the crust ingredients.  Mix well with your hands and place onto a baking sheet with some parchment paper for easy removal.  
  5. Bake in the oven for about 20 min or until crust is golden brown.  
  6. While the crust is baking, cook your Italian sausage and remove grease. 
  7. Remove crust from oven and add your sauce, cheese, and other ingredients.  
  8. Bake for an additional 3-5 min until cheese is melted.  
  9. Let the pizza cool before cutting 
  10. Serve with marinara sauce for dipping - Enjoy! 
Chicken Salad stuffed Avocado with Bacon 

You will need:

1/2  Ripe Avocado
1 Rotisserie Chicken
2 or 3 Claussen Kosher Dill mini pickles- diced
About 1/4 cup mayo (Or more depending on how large your rotisserie is.
Salt & Pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Cooked crumbled bacon


In a bowl, shred the rotisserie and add mayo, garlic powder, salt and pepper, paprika, and diced pickles.  Stir together and add more mayo if needed.


Cook your bacon and crumble


Cut the avocado in half and mash the avocado until creamy inside the skin.  Put the chicken salad on top and crumbled bacon.  Serve!
Ketogenic Pizza 


A ketogenic diet (Keto) is a very low-carb diet similar to Atkins (Low carb, high fat diets)

Ingredients for Dough:

  • 2 cups shredded Colby & Monterey Jack cheese blend
  • 3 oz brick style cream cheese 
  • 1 cup almond flour
  • 1/4 cup Parmesan cheese 
  • 1/8 teaspoon salt
  • Dash garlic powder
  • 1/2 teaspoon dried Italian seasoning 
  • 1 large egg
Other ingredients:
  • 1 tablespoon olive oil (to oil hands before pressing out dough)
  • Desired toppings:  Pizza sauce, pepperoni, mushrooms, olives, sausage, artichoke, garlic, ricotta, etc. (We used Alfredo/ pesto combo, olives, cooked Italian sausage, pepperoni, artichoke, and roasted garlic, and Italian blend shredded cheese on this one)
  1. Preheat oven to 425 degrees.  Line baking sheet with parchment paper. 
  2. Place dough ingredients into bowl and combine until it becomes a dough ball. 
  3. Place ball of dough in center of parchment paper lined baking sheet.  Oil hands with olive oil and press dough out into desired shape until 1/4 inch thick.  
  4. Bake 10-15 min or until golden brown.  (Flip crust and brown on other side if needed about 2-5 min)
  5. Add sauce, cheese, and toppings and cook in oven for an additional 3-5 min or until cheese is melted.  
  6. ENJOY!!
