"The World's Finest" Chicken Salad Sandwiches
David calls these The BEST Chicken Salad Sandwiches that the World has EVER known."  :)

For the chicken Salad:
1 Rotisserie Chicken- Shredded
3-4 tablespoons mayonnaise (Add more if needed)
Salt & Pepper
1 teaspoon garlic powder
2 small pickles- Diced
Optional- You can substitute the pickles for diced red grapes and add chopped pecans!

For the sandwiches:
-Cream Cheese- Softened
- Sriracha Sauce
- Butter & olive oil
- Herbs de Provence Seasoning
- Your favorite bread

Shred your chicken and add to a bowl with the mayonnaise, salt, pepper, and garlic powder.  Then you can either add pickles or your grapes and pecans or anything else you'd like to add.  Stir all together.

For sandwich: On your bread slices add softened cream cheese and Sriracha sauce and spread evenly.  Add your chicken salad and turn your saucepan to medium high on the stove.  Add olive oil and butter to your pan with some herbs de Provence seasoning.  Toast each side of the sandwich in the pan until done and serve.  I served mine with grapes and pineapple.

Philly Cheese Steak Sandwiches

Check the home page for pictures throughout this process:

*1 Ribeye Steak or Tenderloin Steak - Cut into thin strips or finely chopped- Fat removed
*2 Jalapeno's finely diced
*1/2 Yellow onion sliced into very thin strips
*Pepper jack cheese
* Bread buns of your choice
*Salt & Pepper
*2 tablespoons butter

1. Add butter to a skillet with onions and Jalapeno's.  Cook through.
2. Add the steak to the center of the skillet and stir around until cooked through.  Chop even more if needed with your spatula until very finely chopped.
3. Add pepper jack cheese to the steak
3. Remove steak, onion mixture onto a plate and add bread buns to the leftover butter in pan for flavoring.  If needed, put oven on broil and toast a tiny bit.
4. Remove bread and add cheese steak to your sandwich.
5. Serve and Enjoy!

Tuna melts
I made these the day Raegena came over for the cookie bake and they turned out really good!  I like the open faced tuna melts, but you can also add another piece of bread if you want a sandwich.

*1 can of tuna (I like the tuna in oil, but whatever kind you like)
* 2 tablespoons of mayo (Or more if you like)
* Salt & Pepper
* Dill (About 1 teaspoon or more if you like)
*Tomatoes- Sliced or chopped
*Smoked Gouda cheese
* A Bread loaf- I got one with Asiago cheese on top, but you can use french bread, or any kind you like.  Slice into thin slices for the melts (Thick enough to hold up with the tuna on it though).
*Extra mayo to spread on the bread

In a small bowl add your tuna, mayo, salt, pepper, and dill and mix evenly. Add a little bit of mayo to your bread and add about 1-2 tablespoons of tuna on top or until spread evenly on your bread.  Add your tomatoes and slices of cheese on top.

Bake on broil until nice and bubbly.  (Make sure to keep an eye on these as they will burn if you walk away too long).  They are delicious dipped in my cauliflower soup!  ;)

David's famous Ruben Sandwiches

David makes the BEST Ruben sandwiches!

You will need:

-2 slices of rye bread
- Thousand island dressing
- Cooked corned beef
- 1 slice of Swiss cheese
- Sauerkraut
- Toaster- George Foreman grill if you have one

1, Corned beef is in season- Found at Kroger! (Apparently Jan-April) Cook according to directions.  We roasted in the oven at 325 for about 3 hours for a 3 pound corned beef.  The package usually comes with a seasoning pack.  Sprinkle on top and put in the oven.  No other seasonings are necessary.
2. Once beef is cooked through let cool and then slice to your liking.
3. Spread thousand island dressing on each slice of rye bread
4. Put a slice of Swiss cheese on one slice and sauerkraut and beef on the other slice and put together.
5. Toast on George Foreman grill until browned or until cheese is melted. If you don't have a George Foreman, but have a toaster oven, you can toast the bread first in the regular toaster before making sandwich, and then melt the cheese on the 1 slice of bread in the toaster oven and then make your sandwich.  :)
