Maple sausage, egg, & cheese sandwiches on rolls

These are great for breakfast week meal prep!  Cook on Sunday and have for the week.  We love these for before school to make our mornings easy.

  • Maple Breakfast sausage - You can use either in the tube or already cut into the circles.  I used the tube and made my own patties
  • 1 egg per roll depending on how many you want to make
  • Colby jack cheese
  • Slider buns, Hawaiian rolls, or any other roll
  • Your choice of Jelly
  1. Make patties with the sausage and cook the sausage until cooked through.  If you can't find maple sausage (Which for some reason my Walmart never carries it), then you can add some maple syrup to regular sausage or regular sausage works ok too.
  2. Set the patties aside and add sliced Colby jack cheese on top to melt.
  3. In a separate pan, cook eggs with some butter.  Season with a little bit of salt.  I try to not stir too much and make the eggs like a sheet, but you can also do more like scrambled.  I cut the sheet into the desired squares for the rolls when cooked through.
  4. Cut the rolls in half if needed and add the sausage patty and egg on top.  Serve with jelly on the rolls and serve.  ENJOY!

Scotch Eggs

David and I had a lot of fun making these one night.  They are delicious and even good cold!

*1 pound sausage meat
*4 Hard boiled eggs
*2 tablespoons flour
*1 egg beaten
*2/3 cup Panko bread crumbs
*1 quart oil for frying

1. Divide the sausage into 4 equal parts and wrap around each hard boiled egg.  Remove any excess sausage - you want a thin layer around the egg.
2. You will need three bowls - Put your beaten egg in one bowl, flour in another, and bread crumbs in the last bowl.
2. Dip the sausage wrapped eggs into the egg mixture and then the flour, then the egg and then the breadcrumbs.
3. In a pot, add your oil and turn the heat up for frying.  Once ready, slowly add your eggs and cook until brown.  Lay on a paper towel to remove excess oil.

Serve by themselves or with hollandaise sauce.

To cook your hard boiled eggs I suggest using an egg cooker like the one I have at home.  I love my Cusinart egg central.

Breakfast Casserole

We love breakfast casseroles!  Perfect recipe for an easy breakfast meal.  Sometimes I even add crescents or hatch chili's if in season.  You can really do anything you want!

*1 12 pack of eggs
* 1 bag of shredded cheese (I like to use either mild cheddar or Italian blend)
*1 tube of sausage (Whichever kind you like... I usually buy the "Natural" Jimmy Dean brand)
*1/2 bag of shredded hash browns
* 1/2 cup of Half & Half or Heavy cream
*Salt & Pepper
*Optional- Hatch chili's if in season.  Add 1 or 2 depending on spice (Remove seeds!)
*Optional - 1 can of crescent rolls - Lay on the bottom of the casserole.

Cook up the sausage in a skillet until done.  Crack all of your eggs into a bowl and add the Half & Half, salt and pepper.  Whisk all together until smooth.  In a baking dish, add (Crescents if you decided to add), hash browns, eggs, sausage, etc and stir until all together.

Cook on 400 degrees until set (about 25-30 min).  I usually shake it a tiny bit in the oven to see if it moves... if so cook another 3-5 min and check again. Stick a fork into the casserole and see if any egg comes out and looks runny.. if so add back into the oven for another 5 min until set!

Cut into squares and serve.  We normally add our favorite hot sauce over the casserole on our plate as well.  YUM!

**If Hatch chilies are out of season, or you are having trouble finding them, Amazon has some in a can that are already diced.  You can find them here:  https://amzn.to/3iodBDy
