This weekend I made spicy Thai peanut chicken with sweet potato/ carrots and rice.  I decided to use my food processor to chop the peppers, onions, and chicken.  So much faster!  I also used the cheese grater attachment to chop the sweet potatoes.  So if you don't have a spiralizer, and want to try veggie noodles try your food processor!  ☺️

Here is the chicken cooking with peppers, onions, peanut sauce, garlic, chili paste, etc 
The bowl has rice, Thai chicken, topped with shredded sweet potatoes, carrots and some Sriracha sauce.

David made rueben sandwiches tonight!  I wasn't sure if I would like it, but it was so good I finished the entire sndwich.  We went to whole foods and picked out the rye bread and saurkraut.  Then went to Kroger and bought some corned beef to roast in the oven, thousand island dressing, Swiss cheese, and horseradish sauce for dipping.  We were so excited that Kroger had the beef!!! 

After slicing the corned beef and assembling the sandwiches, with thousand island spread and Swiss cheese, he toasted the sandwich on the Forman grill until cheese was melted.  


Yum!!!  So good!!

This weekend was clean eating in 2016! I made Paleo chicken fingers and spaghetti with sweet potato and carrot noodles!  Delicious!

Tonight I made sweet potato chili.  A friend at work is on the whole 30 diet and suggested I try it. This recipe excludes the beans ( which can cause inflammation) and peppers and adds carrots and sweet potatoes instead!  It's a little spicy and sweet ☺️.  This is our new favorite chili!  It's easy enough to make right after work instead of waiting for it to cook in the slow cooker and no indigestion!

I roasted the potatoes in the oven at 400 degrees and then cut into small pieces.
