I woke up this morning and put a pork shoulder roast in the slow cooker.  It cooked all day until the meat was falling off the bone!  Mmmm.  I put my slow cooker outside so it doesn't smell up the whole house.  Every time I walked out back to check the status... It smelled so good!  I like this recipe because you can do so much with the leftovers: pulled pork sandwich, enchiladas, tacos, breakfast burritos, or just eat it by itself with veggies!  The pork is full of flavor.  I froze half the batch for later since we get tired of eating the same thing after a couple days.  I added the recipe to "Dinners" :)

This morning I made a breakfast casserole with sausage, hash browns, eggs, and cheese.  It was so yummy and smelled delightful!  A comforting breakfast on a snowy day.  I added the recipe to "Breakfast recipes".  I like breakfast casseroles because you can really add anything you want to them: salsa, ham, bacon, jalapeƱos, etc to change it up.

Lately I've been making double batches of soups and chili so that we can eat one batch and freeze the second batch.  I was getting tired of  having to go to the store to grab food to cook when we ran out each time.  This is going to be a life saver!  I already have three double servings of chicken tortilla soup and chili in the freezer so that we can just thaw and eat!  I just bought double of each recipe and cooked in two separate slow cookers.  Then I added both to a Tupperware to cool and put one in the fridge and the other in separate freezer bags.  We use the vacuum sealer bags and then I label what it is and the date it was made.  Perfect!  Now our freezer is beginning to get stocked!  Also, we have looked for deals on meat as well and a couple days ago at Kroger we found a good deal on Filet Minion so we cut it up into steaks and froze as well.  I recommend cooking double batches of your favorite recipes and doing the same.  Who wants to go to the store ever time your hungry... not me!  :)  I'll take some pictures of the freezer bags so you can see the portions I use later.

I've never really been a hot chocolate person but I love apple cider!  I made some on Monday when it was icy out.  Nothing better than a nice warm mug full of spiced apple cider to warm you up!

On a cold winter day.. Nothing is better than chili!  I made a two batches so we could eat one and freeze the other.  Trying to fill the freezer with home cooked meals so we can just thaw and eat!  Normally I use ground turkey, but the store barely had any meat available because if the ice so I made due with beef.  Beef is still delicious in this recipe!  you can find this recipe in the "Dinner Recipes" section.  :).

With the cold weather lately I've been in the mood for soups.  Yesterday I made chicken tortilla/ enchilada soup... One of David's favorites!  It's a combination between two recipes I have.  One for chicken tortilla and one for enchilada soup.  I use all of the ingredients for the chicken tortilla and just add enchilada sauce.  It's delicious and adds so much flavor!  Every time I start naming off soup recipes David picks this one!  I made two batches yesterday so that we could eat one and freeze the other since we go through it so fast.  We like to top it with lime juice, avocado, cheese, and tortilla strips.  Yummy!  I just added the recipe to the "Soup Recipes" page.

I didn't get around to making valentine cookies this year, which is probably best since we are still trying to work off some Christmas calories!  We did, however, go to Central Market for their chocolate fest and came home to make: Steak, sea bass, mashed potatoes, cauliflower,  and crab cakes.  The crab cakes were purchased at the store and cooked over the skillet... Delicious.  Central market had a stand with sea bass seasoned with cocoa powder, chili flakes, and garlic salt.  It was so good we tried it at home... Success!  Here's a picture of the crab cakes:


Today I made "Feel better soon" chicken noodle soup!  David doesn't like the noodles so I make my own and add it to my bowl separately.  Such a delicious soup on a cold day like today.  Neither one of us is sick, but this soup does make you feel better if you're under the weather.  Lots of flavor and a little spice :).

Saturday we had a craving for brussel sprouts.  Usually brussel sprouts taste nasty and I don't like them, but these are cooked with bacon fat so what could be better?  Lol we cook bacon on a baking sheet, remove the bacon then add the brussel sprouts cut into fourths with salt and pepper.  They are sooooo delicious!

I made spaghetti with zucchini noodles last night.  Mmmm it was yummy.  I cooked the noodles in olive oil with Italian seasoning.  I like how the zucchini noodles are carb free and you get to eat veggies, but don't feel like you are!  Make sure you add lots of meat sauce or double the meat so you get full.   Spaghetti is one of my favorite meals.
