Creamy Tomato Basil Soup



This is one of my favorite soups. It goes great with a nice chicken salad or tuna salad sandwich!

*2 cans diced tomatoes with juice
*1 cup diced celery
*1 cup diced carrots
*1 cup diced onions
*1 tsp dried or fresh oregano
*1 Tbsp dried or fresh basil
*4 cups chicken broth
*1/2 bay leaf
*1/2 cup flour
*1/2 bag Italian blend shredded cheese (or however much you wish...)
*1/2 cup butter
*2 cups half & half
*Dash of salt & pepper

1. Add the celery, tomatoes, and onions into the food processor until finely diced. Place in a large pot with about 1 teaspoon butter or oil until soft. 
2. Put tomatoes in food processor and finely dice- set aside
3. In another pot, melt the 1/2 cup butter over low heat and slowly add the flour.  Stir with a whisk until smooth. 
4.  Slowly pour the butter flour mixture into the tomato / veggies mixture in a pot on the stove (or in the slow cooker). 

Can also be made in the slow cooker.  Just add the veggies and tomatoes in the slow cooker on low for about 4-5 hours until soft.  Then in another pot do the same with the butter and flour and then add this mixture into the slow cooker.  Stir and add remaining ingredients until smooth. 

Feel Better Soon Chicken Noodle Soup
I always make this soup for David whenever he isn't feeling well and he's usually feeling better once he's done with a bowl of this soup!  It's great for colds or nausea or just if you're in the mood for chicken noodle.


*1 purple onion diced into small pieces
*1 whole rotisserie chicken shredded
*1 heaping teaspoon "Better than bullion chicken base"
*3-4 stalks celery diced
1 tablespoon of minced garlic
*3-4 carrots or 1/2 bag baby carrots diced
* About 4 cups of water
*Dashes of dried basil, thyme, oregano, red pepper flakes, salt & pepper
* 1/2 bag egg noodles

- Add all except the noodles to your slow cooker and cook on low for about 3-4 hours.

Once done cook your noodles on the stove and add to soup.  Turn to warm.
*Serve with crackers


Roasted Cauliflower White Cheddar Soup


I love to make this soup to go along with sandwiches!  It reminds me of a potato soup but a little lighter.

*1 large head of cauliflower
*2 tbsp olive oil
Salt and pepper
*1 tbsp butter
*1 cup finely chopped yellow onion
* 1 clove garlic mashed
*3 cups milk
*2 cups chicken broth
*1/2 cup heavy cream
*1/2 tsp thyme, basil, and parsley
*6 oz package shredded white cheddar cheese
*1oz shredded Parmesan cheese

Cut cauliflower into pieces and roast in the oven with olive oil drizzle at 425 for about 10-15 min or until brown.  Once done add to food processor and chop until finely diced for the soup.  Add into slow cooker.
In a pot add butter, onions, and garlic and cook until done.  Add to sloow cooker.  Add the rest of your ingredients to slow cooker and turn on low. Cook for about 1-2 hours and stir occasionally. Serve with Parmesan on top.


Chicken Tortilla/ Enchilada Soup

*1 Rotisserie chicken shredded- I usually get the large garlic & herb chicken from Kroger.
*1 can Rotel tomatoes
*1 can white corn
*1 can enchilada sauce
* 4 cups water
* 1 handful of chopped fresh cilantro
*1 heaping tablespoon of "Better than bullion chicken base"
*1 tablespoon minced garlic
*1 purple onion diced
*1 1/2 teaspoon cumin
*1 1/2 teaspoon Mexican chili powder
*Salt & Cracked pepper- to taste
*lime juice
*Avocado- diced
*Tortilla strips- can be found in the salad section by the croutons
*Monterrey jack cheese- shredded

Add all ingredients except the lime juice, avocado, cheese, and tortilla strips to slow cooker and cook on high for about 3 hours or until onions are cooked through.  You can also put in a large pot on the stove on medium- medium high and simmer until onions are cooked through or you can cook the onions before hand to save you time and just wait until it's warm... 

Once done add soup to your bowl with a splash of lime juice, diced avocado, tortilla strips and cheese.  ENJOY!  :) 

Pasta E Fagioli Soup
Oh my goodness... this recipe is just like Olive Garden's!  It's so delicious!  I like to add Parmesan cheese to it or dip garlic bread into the soup.

* 1 pound ground beef or mild Italian sausage (or both)
*2 Tbsp olive oil
*1 cup diced carrots
*1 cup diced celery
*3/4 cup chopped yellow onion
*1 tablespoon minced garlic
*3 (8 oz) can tomato sauce
*3-4 cups beef broth or chicken broth (Use better than bullion base)
*1 cup water
*1 (15 oz) can diced tomatoes
*1 tablespoon sugar
*1 1/2 teaspoon dried basil
*1 teaspoon dried oregano
*3/4 teaspoon dried thyme
*Salt & Pepper to taste
*Ditalini pasta
*1 (15 oz) can red kidney beans
* 1 (15 oz) can northern beans
*Romano or Parmesan cheese to top.

1. Cook your onions and beef or sausage in a saucepan until browned.  Add all ingredients to slow cooker and cook on low for about 5 hours or high for about 3-4 or until carrots and celery is cooked through.  Serve with Parmesan cheese on top or garlic bread

Minestrone / Tortellini Soup 

I really like this recipe, mainly because I'm a huge fan of pasta and Italian food, but it made me feel like I was being healthy, even though I was eating tortellini!  

*4 cups chicken broth
*1 can V8 Juice
*1 can of diced tomatoes
*1 can white beans
*Chopped green onion
*Chopped celery (About 4-5 stalks)
*Chopped carrots (1/2 package baby carrots)
*1 clove of garlic minced
*Spinach chopped (About 6 leaves)
*Thyme, Basil, Oregano, & Pepper (to your taste)
*1 package sweet Italian sausage cooked and drained

Add all ingredients to your slow cooker.  For the celery and carrots, I added into my food processor for faster chopping, but you can just chop with a knife if you don't have one.  Cook on high for 2 hours. Add cheese tortellini once soup has cooled a bit of to your bowl. I added some sausage tortellini too top with Parmesan cheese! Yum!


Beefy Veggie Barley Soup

This is one hearty soup and is super easy!

1 lb ground beef
1 lb ground sweet sausage
1 can tomato sauce
2 cans sliced carrots
1 can V8 juice
1 can diced tomatoes in juice
1 can red kidney beans
1 can white navy beans
Bay leaf, oregano, basil, garlic, pepper
1 tablespoon Beef bullion / 1 tablespoon veggie bullion / 4 cups water
½ cup barley
5 stalks celery / ½ red onion diced

1 can mushrooms 

1. Cook the beef and sausage until done and drain fat.
2. Cook onions and celery in the pan until cooked through.
3.  Boil barley in about 4 cups of water until soft & set aside.
3. Put all ingredients into the slow cooker and turn on high for about 1 hour & serve!
4.  If not soupy enough, add a little bit more water or V8 juice.
