Last night I made leftover pheasant enchiladas with avocado cream sauce.  David couldn't get enough!  I added jalapeños to the shredded pheasant and to the cream sauce so it was a little spicy.    I just love leftovers!  You can do so much with it!  ( Recipe can be found in the "Mexican food recipes section").
