With the cold weather lately I've been in the mood for soups.  Yesterday I made chicken tortilla/ enchilada soup... One of David's favorites!  It's a combination between two recipes I have.  One for chicken tortilla and one for enchilada soup.  I use all of the ingredients for the chicken tortilla and just add enchilada sauce.  It's delicious and adds so much flavor!  Every time I start naming off soup recipes David picks this one!  I made two batches yesterday so that we could eat one and freeze the other since we go through it so fast.  We like to top it with lime juice, avocado, cheese, and tortilla strips.  Yummy!  I just added the recipe to the "Soup Recipes" page.

    1. You should! It's really good. I did make the mistake of adding Rotel with green chilies which made it really spicy, so if you don't want that much spice stick to regular Rotel.
